When you’re on the road it’s important that you eat healthily. It can be especially difficult to find all the nutrients you need if you are vegan. Here are 4 vegan foods that you should eat when traveling to help avoid malnutrition and keep you fit and healthy.

Tofu is another food that is packed full of protein and can fill you up with slow-release energy. It is also light to carry and easy to cook. Simply fry or lightly grill and it will be ready in minutes.

When you’re traveling, it can be a great idea to always bring a pot of peanut butter with you. It is packed full of protein, fiber, and minerals and is very easy to eat. Simply scoop out of the jar and eat on its own, on bread, or in stir-fries and curries.

COOKED CINNAMON SPICED PLUMS/APPLES 1 apple, cored and chopped 1 plums, pitted and sliced 2 tbsp honey 1/2 tbsp coconut oil 1/4 tsp ground cinnamon A pinch salt DIRECTIONS In a saucepan on medium high heat, melt together the honey and coconut oil. Add the apples and plums, cinnamon and salt and mix to coat the plums.
