When You Go to Cyprus, This is What You Have to Eat

A lot of people don’t think about Cyprus or the rich cuisine it has, but that has to stop! Cyrpus is an amazing island that has so much amazing natural beauty and history and an amazing gastronomy. Cyrpus is a perfect blend of Middle Eastern and Meditteranean flavors, so if that’s your vibe, you have to visit Cyprus!

Halloumi

Halloumi is a cheese most people around the world know about, but many don’t know that it’s origins are in Cyrpus! This is a kind of cheese that doesn’t melt easily, so you’ll often find it grilled or fried in Cyprus, which is very unique and delicious.

Sheftalia

This dish is Cypriot but also is served in neighboring countries of Greece and Turkey. It’s essentially a stuffed sausage with vegetables and other fillings, and even though it sounds simple, the best ones are in Cyrpus and really full of flavor.

Louvi

Louvi is a traditional Cypriot dish that container black-eyed beans, zucchini, and other leafy greens. This is a super healthy dish that is eaten several times a week in Cyprus, so if you’re looking for a little break from meat, louvi is a wonderful change of pace.

Louvi – black eyed peas! One of my favourite legumes and something that I always have stored in my pantry. To prepare for this meal you need to clean out the louvi and then let it soak in a bowl with water. The process of cooking it is quite simple as in you just basically boil it. An important point is to boil it first on it's own with added lemon juice. Then you get rid of that water and add a fresh pot of water with zucchini or silverbeet/chard plus lemon juice. The lemon juice helps the louvi maintain its colour rather than turning black. The whole cooking takes 20-25min. So you can boil it for 10min first and then a further 10-15min until the louvi and the veggies are cooked to your liking 😄 Then serve it with a fresh salad, tuna even and a good drizzle of olive oil and lemon. This freezes well, so i tend to cook 1/2kg of it at a time for us to eat and then freeze. Makes for a great work lunch and my daughter loves it.
