Top Tips for a Healthy Diet if You’re on the Road

Traveling down that open road can be exhilarating, but it is important to try and stay healthy. The best way to do this is to ensure a healthy diet. If you have a healthy well-rounded diet you’ll also have more energy and a better mood to enjoy those thrilling adventures. Here are four great tips.

Nuts and Seeds

Nuts and seeds are a great snack. You can graze on them during the day while you’re traveling. They’re light, easy to carry, cheap, and packed full of protein, minerals, and good fats. Pumpkin seeds are especially good.

Cookware

If you can, you should get a pressure cooker or portable stove. The best thing to get is an induction cooktop. They are very quick to heat up and cook effectively and efficiently. If you have a cooktop, you can cook food for maximum nutrition.

Oats

If you can find oats to eat in the morning, this will set you up for the whole day. Packed full of fiber, they also have a very slow release of energy that will keep you fuelled up. They are also rich in protein.

Lentils

A quick and easy way to get a good fix of protein, fiber, and vitamins is to make lentil based soups or curries. If you have a cooktop or a stove you will be able to whip these up in no time.

Easy lentil and bulgur soup This soup is definitely on my list of “go-to easy weeknight recipes” and I especially love it with warm, crusty bread flavored with rosemary. We have it at least once a week, even during the summer months. Inspired by the Turkish 🇹🇷 lentil soup, this soup gets a little kick from ground cayenne, extra fiber from the bulgur, and the carrot adds an unexpected sweetness. The olive oil is the star here, don’t skip it! 1️⃣Rinse the lentils in a colander and set aside 2️⃣In a large saucepan, sauté 1 large chopped yellow onion with some salt and pepper 3️⃣Cook the onions until softened and then add 2 cloves of minced garlic cloves and cook until fragrant, stirring constantly 4️⃣Add 1 heaping tablespoon of tomato paste, 1 tsp of ground cumin, 1 tsp of ground cayenne or any ground red chili pepper of your choice & sauté for about a minute 5️⃣Next, add 1 cup of red lentils, 2 tbsp of bulgur, 1 large diced carrot, about 6 cups of water, 1 veggie bouillon, and simmer covered, until the lentils have broken down, about 20-25 minutes 6️⃣Using a blender, purée about 1/4 cup of the soup and then add it back to pot. Adjust the consistency of the soup by adding some hot water if it appears too thick 7️⃣Taste and season with salt and pepper.
