When you’re on the road it’s important that you eat healthily. It can be especially difficult to find all the nutrients you need if you are vegan. Here are 4 vegan foods that you should eat when traveling to help avoid malnutrition and keep you fit and healthy.

Lentils

Eating lentils is a great way to get good amounts of protein and fiber into your diet. They are filling and can be delicious when cooked with herbs, spices, and vegetables.

Oats

A simple way to gain slow-release energy, protein, and fiber is to eat oats. They are easy to prepare, light to carry, and perfect for travelers.

Tofu

Tofu is another food that is packed full of protein and can fill you up with slow-release energy. It is also light to carry and easy to cook. Simply fry or lightly grill and it will be ready in minutes.

Peanut Butter

When you’re traveling, it can be a great idea to always bring a pot of peanut butter with you. It is packed full of protein, fiber, and minerals and is very easy to eat. Simply scoop out of the jar and eat on its own, on bread, or in stir-fries and curries.

COCONUT PORRIGDE WITH STEWED PLUMS AND APPLES 100 g rolled oats 400 ml water 200 ml coconut milk 1/4 tsp ground cinnamon 1/4 tsp vanilla bean powder Pinch salt DIRECTIONS Combine all ingredients over medium high heat and bring to boil. Turn down the heat and let simmer for 4-5 minutes, stirring from time to time until you have the consistency you like. COOKED CINNAMON SPICED PLUMS/APPLES 1 apple, cored and chopped 1 plums, pitted and sliced 2 tbsp honey 1/2 tbsp coconut oil 1/4 tsp ground cinnamon A pinch salt DIRECTIONS In a saucepan on medium high heat, melt together the honey and coconut oil. Add the apples and plums, cinnamon and salt and mix to coat the plums.
